The color of peppers (yellow, green, red or orange) is the element that indicates the amount of capsaicin – the main active substance in peppers. Peppers are excellent sources of vitamin C and vitamin A (due to the high concentration of carotenoids, such as beta-carotene), a very powerful antioxidant. Red peppers, and especially hot peppers, are richer in capsaicin than others, but all peppers, regardless of variety and color, are great for health, with some of the best natural nutrients available.
