Green Soy Salad:
1, 12 oz. pkg. shelled frozen green soybeans
1, 16 oz. pkg frozen corn
1, 8 oz. can water chestnuts or 1⁄2 peeled, chopped cucumber or 1⁄2 c. peeled, chopped jicama
⅓ c. celery, finely chopped
⅓ c. green onion, thinly sliced
¼ c. red sweet pepper, diced
5 Tbsp. lemon juice
1 ½ Tbsp. Honey
1 ½ tsp. Salt
1 Tbsp. fresh parsley, finely chopped
1 clove garlic, pressed
⅛ tsp. dill weed
¼ tsp. basil

Mac and Cheese:
3 c. macaroni noodles, whole grain, dry
1 can coconut milk
1 ¼ c. water
½ c. nutritional yeast flakes, optional
2 tsp. Salt
¾ c. cashews
¼ c. pimentos or roasted bell peppers
3 Tbsp. lemon juice
¼ c. corn starch
2 tsp. onion powder

Favorite Greens:
1 large onion, diced
1 red or yellow bell pepper, diced and/or 2 diced medium carrots
3-4 bay leaves
½ can coconut milk
½ tsp. onion powder
½ tsp. garlic powder
½ -1 tsp. Salt
1-2 cups water
1 lg. bag cut/washed greens of choice

Greek Style Black-Eyed Peas:
Extra virgin olive oil
1 large yellow onion, chopped
4 garlic cloves, chopped
1 green bell pepper, chopped
2 to 3 carrots, peeled and chopped
1 15-oz can diced tomato
2 cups water
1 dry bay leaf
1 ½ teaspoon ground cumin
1 teaspoon dry oregano
½ teaspoon paprika
Salt
½ teaspoon red pepper flakes, optional
2 15-oz cans black eyed peas, drained and rinsed
1 lime or lemon, juice of
1 cup chopped fresh parsley

1 c. grated raw carrots, packed
½ c. water
¼ – ⅓ c. honey
1 tsp. Vanilla
1 ½ c. coconut
1 c. oat flour
½ tsp. salt
